Video encoding is the meat of the encoding options here. Server should point to whatever server the program determines as 'best' after using the 'Test Bandwith' option. Most of the time an individual streamer doesn't need to bother with stream key and L/P authentication works fine. Stream keys are used for when someone else wants to stream on your (or perhaps a group) channel-that way you don't give out a potentially sensitive password. The channel creds are pretty self-explanatory, but the biggest 'unknown' here is channel authentication vs stream key. Broadcast settings (Broadcast > the gear symbol) will give you a number of options. I've heard 1900 is proper for mobile, but that was awhile back and will likely change with growing technologies. You can pretty much forget having mobile viewership if you stream at 2500. I wouldn't really recommend it because viewership will likely suffer, depending on server load, locations of viewers to servers, lag, ping, individual network connections, and whether or not a viewer is mobile. This will give you strong quality if you're not partnered with Twitch (and if you are, I doubt you're reading this). The highest bitrate you'll want to stream at is 2500 Kbps. Higher is better obviously, but what you don't want to do is set your stream bitrate so high that the Twitch servers (and thus viewers) can't support it. A decent upload bitrate to have is around 2.5 Mbps. Sorry, if you're running DSL, your upload bitrate is going to suck terribly.

What is most important about streaming by far is the standard bitrate used to stream at. If you feel I explained something wrong, or disagree with me, please let me know. To add, I'm not an EXPERT by any means, I've just been doing this long enough to understand the mechanics behind working the streaming software. To add, this will be specifically TWITCH and not other craptacular game streaming services. As far as other hardware capture cards, I can't vouch for how those settings work. XSplit can (and typically does) autoconfigure capture cards, although I do know people can tweak certain settings.
